Cajun Chicken & Chorizo Pasta

 



Absolute favourite dinner ever and the fact it’s done and dusted in less than 30 mins is an even bigger bonus.



Ingredients for 2 people:


• 2 x 170g Chicken Breast

• 160g dried pasta

• 100g Philadelphia Lightest

• 1 red onion

• 1 red pepper

• 2 large garlic cloves

• 1.5 tsp of @jdseasonings Cajun Spices

• 100 ml chicken stock

• 30g diced chorizo


Instructions:



• Fry off your red pepper & onion for 5 mins then add in 0.5 tsp of the @jdseasonings Cajun seasoning and stir then add your Garlic and fry for another 1-2 mins.

• Then add in your diced up chicken breast and I always add another tsp of Cajun spices and allow to fry until chicken is cooked through. At this point put your pasta on to boil as per instructions.

• Once the chicken is almost cooked through add your stock and Philadelphia lightest and give it a proper stir until the philly is all melted and allow to simmer for 5 mins until sauce is thickened.

• 2 mins before the end stick your chorizo on a fry frying pan and allows to crisp up and you add this at the end once served

• Add your cooked pasta to your chicken and stir thoroughly then transfer to your bowl and top with your chorizo and some coriander.
